esme had more damage than edward, when carlisle bit esme the first bite she was bleeding alot so he bit her again to increase the venom in her body to turn her into a vampire faster, but edward didnt have the damage that esme had so he bit him once (but it was a strong bite) and he was turned (he was before esme)

she had more damage done and she was bleeding 2 death prolly so he put more venom in her so it would be quicker and so the venom would stop the bleeding. hope that helps

also even though Carlisle hated the taste of blood and refused to drink it Esme was his true mate and her blood tasted sweeter to him that's why he gives that look after the first bite he hates it but wants more.

That's just the film's version.
In the books, it's mentioned that when Carlisle bit Edward, he didn't know exactly what would turn a human into a vampire so he bit him repeatedly (because Carlisle had been bitten repeatedly when he'd been turned). By the time he turned Esme, he knew one bite would be enough.
