In the books, it's mentioned that when Carlisle bit Edward, he didn't know exactly what would turn a human into a vampire so he bit him repeatedly (because Carlisle had been bitten repeatedly when he'd been turned). By the time he turned Esme, he knew one bite would be enough.

But also in the books its noted that the mate of a vampires blood smells sweeter like Edward and Bella so it will have been the same for Carlisle to Esme. Even if he didnt want to like Edward in the ballet studio he would want more after he got the taste.

I can't remember it specifically stating that it's a mate's blood which smells sweeter. Just that specific people's do - "cantate". Emmett's didn't smell particularly sweet to Rosalie or she wouldn't have been able to bring him to Carlisle. Emmett attacked 2 people because their blood was particularly entrancing but obviously he didn't love either.
