Does Bill ends up with Sookie at the very end of the book series??

No she was still with Eric.

the writer hasn't actually finished the series and she isn't actually with Eric if you have gotten to book #9 yet.

OMG book 9 is so the answer Bill doesn't end up with sookie but omg i can not believe eric did that if you have read the 9th book like me you know what i am on bout i get the fact that it was for her safety but like that was a big thing not to discuss with her not that i am complaining i think they are great together xD
